Super Bowl Healthy Snack Recipes

Here are my super bowl snack recipes with a healthy twist.

Faux Queso Dip

1 can white beans (cannellini beans)
1 tsp cayenne pepper
1 tsp black pepper

Mix in a blender with all the ingredients. Place a tortilla shell in a dish and pour dip in. Tastes like queso. You can add a cheese on top for a more cheesy flavor! Eat with crudites or homemade baked tortilla chips.

Brownies (with black beans)

1 Brownie mix
1 can black beans

Blend can of black beans with a 1/2 c water. Pour into brownie mix and blend together. No need for the eggs or oil, making this a wonderful healthier treat. It sounds crazy if you've never tried anything like this, but trust me it's really good. You can also make them with a can of pumpkin, but I haven't tried that. Plus, you, or your child, can eat the batter as some are want to do!

TIP: I like to make mine in a mini-cupcake pan because they turn out crispy on the outside and chewy on the inside. Yum!
